Chicken Avocado Salad

Chicken avocado salad is one of my favorites go to salad, easy to make, super testy and healthy. It makes a great meal for one or as a side to share, I used skinless boneless chicken breast but thighs or drumsticks works as well, my dressing is simple lime juice, olive oil, salt and pepper, if you are a fan of garlic like me mince a clove and add to your dressing.

Ingredients
- 1/2 lb Chicken breast boneless skinless cut into cubes
- 1 tbsp olive oil extra virgin
- 1 avocado pitted, peeled, sliced
- 1 cup cherry tomatoes
- 1/4 medium onion thinly sliced
- 1 bunch lettuce coarsely chopped
- 1 Serrano pepper optional
Dressing
- 3 tbsp olive oil extra virgin
- 1 lime juice
- 1 clove garlic optional
- salt and pepper
Instructions
- Heat the oil in a skillet over high heat until very hot but not smoking, add the cubed chicken, and cook in one layer, for about 4-5 minutes until golden brown, Turn pieces of chicken and continue cooking for 3-5 more minutes. Set aside to cool
- Meanwhile, chop all the other ingredients and put in a bowl.
- Prepare the dressing by combining all the ingredients and whisk with fork or whisker
- Add the chicken and dressing, combine well and enjoy
Notes
- For a little sweetness you may add honey to your dressing, I do it for a change and I like it
