1/2 lbChicken breast boneless skinless cut into cubes
1 tbspolive oilextra virgin
1avocadopitted, peeled, sliced
1 cup cherry tomatoes
1/4 medium onionthinly sliced
1bunchlettucecoarsely chopped
1Serrano pepperoptional
Dressing
3 tbspolive oilextra virgin
1lime juice
1clovegarlicoptional
salt and pepper
Instructions
Heat the oil in a skillet over high heat until very hot but not smoking, add the cubed chicken, and cook in one layer, for about 4-5 minutes until golden brown, Turn pieces of chicken and continue cooking for 3-5 more minutes. Set aside to cool
Meanwhile, chop all the other ingredients and put in a bowl.
Prepare the dressing by combining all the ingredients and whisk with fork or whisker
Add the chicken and dressing, combine well and enjoy
Notes
For a little sweetness you may add honey to your dressing, I do it for a change and I like itÂ
